Ingredients:

  • 1 1/4 pounds scallops, about 24
  • Kosher salt and freshly ground black pepper, to taste
  • 6 tablespoons unsalted butter, divided
  • 1 garlic clove, minced
  • 4 sprigs of fresh thyme
  • 1 lemon, cut into wedges

Instructions:

  1. Remove the small side muscle from the scallops, rinse with cold water and dry thoroughly.
  2. Season the scallops with 3/4 teaspoon of salt and 1/2 teaspoon of pepper.
  3. Melt 1 tablespoon of butter in a large skillet over medium-high heat. Working in batches, add the scallops to the pan in a single layer and cook, turning once, until golden brown and translucent in the center, about 1 to 2 minutes per side. Reserve and keep warm.
  4. Reduce the heat to medium-low; melt the remaining 5 tablespoons of butter, 1 tablespoon at a time, until the butter begins to foam. Add the garlic and thyme to the pan and cook, stirring frequently, until fragrant, about 1 minute.
  5. Return scallops to skillet; tablespoon of butter on scallops for 1 minute.
  6. Serve immediately with lemon wedges.
