Easy slow cooker recipes are one of my favorite types of recipes to make. From our favorite chicken recipes like White Chicken Chili and my meal prep chicken to soups like vegetable soup and beef recipes including our favorite version of beef bourguignon, my slow cooker and I are the ones. best friends. And add this simple roast recipe that everyone loves and you better believe I’m singing the praises of one of my favorite cooking devices.

I can’t even begin to tell you how many times I’ve made this recipe since my niece, Katherine, shared it with me some time ago. She once told me about one of her favorite slow cooker recipes that she cooks all the time.

And with just a bite I got hooked and have been doing it ever since! That Kat is an intelligent and intelligent young woman!

Traditional Mississippi roast includes the use of sachets of seasoning and gravy. As I prefer not to use them and keep my recipes as simple as possible, I decided to redo this version in this 3 ingredient wonder! I have included the optional ingredients that you would need for the more traditional recipe if you wish.

How to Make a Pepperoncini Roast Recipe

Now, making this slow cooker roast recipe really couldn’t be much easier!

Ingredients you will need for this recipe

  • To roast – I like to use a chuck roast that weighs about 3 pounds.
  • Seasoning for stone house – You will need a tablespoon of my homemade seasoning which I call Stone House Seasoning. If you already have it on hand, great! Otherwise, use 1 1/2 teaspoon of kosher salt, 1 teaspoon of ground black pepper and 1/2 teaspoon of granulated garlic or 1/4 teaspoon of powdered garlic.
  • Pepperoncini peppers – You will use an entire jar (25.5 ounces) of pepperoncini peppers with their juice.

You simply add your roast, sprinkle with your Stone House seasoning, then pour into an entire jar of pepperoncini peppers, along with their juice. Finally, put the top of your slow cooker, set the timer and walk away!

That’s all.

Classic Mississippi Roast Recipe

To bring this recipe closer to the classic Mississippi roast recipe, you’ll add two more ingredients.

Ranch Seasoning – the original recipe that was shared with me included a packet of ranch seasoning mix. I use my own homemade ranch seasoning instead.

Cornstarch – again, the original recipe included using a sachet of sauce mix. Instead of the sachet of sauce, I use cornstarch to make a porridge to add to the roast to form a quick sauce. To do this, simply pour in about 1/2 cup of the juice from the slow cooker after the roast is cooked through. Pour the juice into a small bowl. Add 1 tablespoon of cornstarch to the juice and whisk together until smooth and combined.

Once cooked, shred the beef with two forks and serve.

It’s delicious served with mashed potatoes and vegetables or sandwiched with provolone cheese, layered on the beef (and a little juice) and served hot. If you want your cheese to be completely melted and delicious, put it back in the oven for about 3-5 minutes or in the microwave for about 30 seconds.

To make ahead, prepare as directed, cool, then store in the refrigerator for up to 5 days.

  • Add the chuck roast to the slow cooker. Add Stone House Seasoning and optional Ranch Seasoning to roast and pour in peppers and their juices.

  • Set the timer and cook on low heat for 8 hours.

  • To serve, mince the beef with two forks and serve with peppers.

Optional ingredients

  • To make a sauce, after the roast is shredded, pour in a cup of juice from the slow cooker. Pour the juice into a medium bowl. Stir in cornstarch until liquid is smooth and forms a mush. Stir the mixture into the juice from the slow cooker.
