I did this Pine nut salad with avocado for years. First discovered in my sister’s house ages ago while browsing her many community cookbooks, it has since become a family classic.

Ingredients needed for pine nut salad with avocado:
- a head of red leaf lettuce
- a head of green leaf lettuce
- toasted pine nuts
- grated mozzarella cheese
How to toast pine nuts:
To quickly toast the pine nuts, simply place them in a small skillet over medium heat. Watch them carefully and use a wooden spoon to move them around until they are lightly toasted. Be careful, they will burn if you don’t take care of them! Pour them on a paper towel to cool them before adding them to your salad. I like to buy pine nuts from Costco. They’re cheaper there, and you can keep the big bag in the freezer and use them as needed.
How to make the dressing:
This is my favorite dressing. It’s so easy to prepare that I often do it to add it to other simple green salads we make for dinner. Mix 3 tablespoons of olive oil with 4 tablespoons of white wine vinegar and a tablespoon and a half of Dijon mustard. Add salt and freshly ground black pepper, whisk everything together, and it’s ready to use for your avocado pine nut salad. The dressing can be made ahead or you can make an extra and store it in the refrigerator.
It’s a simple salad, and it’s damn good. Many of my extended family and network of friends have now incorporated this salad into their meal rotations. It is so good! Add grilled chicken to make a main course salad.

Servings: 8 portions
- 4 soup spoons white wine vinegar
- 3 soup spoons olive oil
- 1½ soup spoons Dijon’s mustard
- salt and pepper, to taste
- 1 lead green leaf lettuce, cleaned and chopped
- 1 lead red leaf lettuce, cleaned and chopped
- 2 way vine-ripened tomatoes, chopped
- 1 tall Lawyer, chopped (about 1 cup)
- ⅓ Chopped off Pine nuts, wire rack
- 1/4 Chopped off grated mozzarella cheese
- An easy way to toast raw pine nuts is to dry them in a heated pan, stirring often so they don’t burn (they burn easily if left unobserved).
- Grill chicken and marinate in dressing for a great summer salad!
