Tostadas can be made to your liking. I show how to make tostadas in the most basic way, and these are completely vegetarian. Feel free to stack the lettuce on high heat and add some taco meat or ground beef or chicken. Add chopped fresh cilantro to your tostadas. Serve them with rice and margaritas. Personalize them with your favorites. Traditional tostada recipes call for the use of fried tortillas. We prepare them here.

Ingredients needed:

  • tortillas (corn or flour)
  • refried beans
  • grated cheese (cheddar or cheddar / jack mix)
  • chopped lettuce
  • chopped tomato (or salsa)
  • sour cream
  • chopped avocado (or guacamole)

How to make Tostadas:

If you are using flour tortillas, toast them on one side while broiling in the oven. If you’re using corn tortillas, you’ll want to fry them first.

How to fry corn tortillas:

In a small skillet, heat 1/2 inch or less of the oil over medium-high heat. When you can throw a drop of water in the oil and sizzle, you are ready to fry your tortillas. Place a tortilla in the hot oil and use tongs to squeeze it so that it cooks on both sides – cook for 30 to 40 seconds until it begins to crunch. Place the tortilla in a paper towel-lined plate. Repeat with the remaining tortillas, placing paper towels between each cooked tortilla to absorb the oil.

spread beans on a tortilla

Flip the toasted tortillas over and spread the refried beans on the other side (or spread the beans on fried corn tortillas).

Sprinkle grated cheese over the beans. Use the cheese of your choice. I prefer sharp cheddar or a cheddar / jack mix.

Grill them again until the cheese is melted and the tortillas are crispy.

Side note:

When I was growing up my mom often made them for dinner (along with her famous tacos) but she always made them with fried tortillas and she called them “chalupas”. I don’t know how she got that name attached to these, but that’s how we got to know them. Chalupas are made with fried masa dough and are garnished with similar fillings. So these are “Mom Chalupas! “

Calories: 312kcal

  • Eight 6 inch wheat tortillas
  • 2 cups refried beans
  • 2 cups grated cheese (cheddar or cheddar / jack mix)
  • 2 cups (or more) finely chopped lettuce
  • 1 Chopped off chopped fresh tomato (or salsa)
  • 1 Chopped off sour cream
  • 1 Chopped off cut avocado (or guacamole)

  • Preheat the grill. Spray a baking sheet with non-stick cooking spray. Place 4 tortillas on the baking sheet and heat on the center rack in the oven for 4 minutes (keep an eye on them so they don’t burn or brown too quickly!)

  • Remove the baking sheet from the oven and turn the tortillas over. Spread each tortilla with ¼ cup refried beans and top with ¼ cup cheese. Bake until cheese is hot and bubbly and tortillas are crisp, 5-7 minutes more (again, watch them!) Repeat with remaining tortillas.

  • Serve immediately, topping each tortilla with lettuce and desired toppings – tomato / salsa, sour cream, and avocado / guacamole.

  • * Do you have any leftover taco meat or chicken? Add some on top to make this meal more substantial.
  • * This recipe is gluten-free adaptable – use GF corn tortillas instead of flour and make sure the refried beans and salsa you use are gluten-free.
