Tiramisu is a classic Italian dessert recipe. This version is easy to make and tastes even better on day 2!

Tiramisu and gelato are probably the desserts that come to mind most often when thinking of Italian desserts. The gelato is classic. There is a fabulous ice cream shop in almost every street in Italy. And Tiramisu will be on the menu of all the desserts of Italian restaurants. This classic dessert has layers of espresso soaked lady’s fingers with sweet mascarpone cream and a chocolate dusting. It’s wonderful to have a sweet bite after eating lasagna or spaghetti and meatballs. Tiramisu is a favorite!

Ingredients needed:

For the cream mixture:

  • egg yolks
  • sugar
  • sweet marsala
  • mascarpone cheese
  • heavy whipped cream

For the espresso blend:

  • brewed espresso (or strong coffee)
  • Kahlua
  • sweet marsala
  • vanilla extract

How to make tiramisu:

The cream is prepared by whisking the egg yolks, sugar and marsala in a bowl placed over simmering water (or in a double boiler) until the mixture thickens, doubles in volume and reaches 160 degrees. F. At this point, stir in the mascarpone cheese. Whip the cream separately until you get soft peaks, then fold the cream into the mascarpone mixture. This is the cream you will need for the Tiramisu.

The espresso blend is made by combining brewed espresso (or strong coffee) with Kahlua, Marsala, grated chocolate and vanilla. This mixture needs some time to cool.

To assemble, quickly dip the lady’s fingers in the espresso mixture, then place them in a 9 × 13-inch baking dish. Cover them with half the cream. Add another layer of soaked lady’s fingers, then cover them with the rest of the cream.

Finally, finish the top of your Tiramisu with a dusting of cocoa powder and shaved chocolate.

How to make chocolate shavings:

Use a vegetable peeler or knife to shave thin, flat shavings from a block of room temperature chocolate. If you want more “curls” than shavings, briefly microwave the block of chocolate to soften it before peeling it.

Cut it into squares to serve. This recipe makes approximately 12 servings. Don’t worry about having leftovers as this Tiramisu is excellent when eaten the day after it’s made.

Can you make Tiramisu without alcohol?

Yes. Forget about the sweet Marsala wine altogether. Forget the Kahlua. The Tiramisu will simply be flavored with coffee and chocolate and will not have the added alcohol flavors.

Ingredients

CREAM BLEND:

  • ten extra large egg yolks
  • ¾ Chopped off granulated white sugar
  • Chopped off sweet marsala
  • 12 ounces mascarpone cheese

ESPRESSO AND LADYFINGERS BLEND:

  • cups brewed espresso
  • 1 ounce dark chocolate, grated
  • ¼ Chopped off Kahlua
  • 2 soup spoons Marsala
  • 1 teaspoon vanilla extract

GARNISH:

  • ¼ Chopped off Cocoa powder without sugar
  • 2 ounces dark chocolate, shaved

Instructions

PREPARE THE CREAM BLEND:

  • Whisk together the egg yolks and sugar in a heatproof bowl placed over a pot of simmering water. Add the marsala and continue to whisk until the mixture is thick and doubled in volume (this should take about 10 minutes and the temperature should rise to about 160 degrees F). Remove from fire. Stir in the mascarpone until well blended.

  • In a chilled bowl, use an electric mixer to whip the heavy cream until soft peaks form. Stir in the whipped cream into the mascarpone mixture.

PREPARE THE ESPRESSO MIX:

  • In a small saucepan, combine the espresso, chocolate, Kahlua, Marsala and vanilla. Heat gently and stir to dissolve the chocolate. Then cool the mixture to cool, about 15 minutes.

ASSEMBLE THE TIRAMISU:

  • Quickly dip each ladyfinger into the cooled coffee mixture and arrange them in a single layer in a 9 x 13-inch pyrex pan. Do not soak the cookies or they will get too wet. (Just soak them and remove them quickly).

  • Distribute half of the cream mixture evenly with a spatula over soaked lady’s fingers. Repeat with a second layer of soaked lady’s fingers and the rest of the cream.

  • Sprinkle the top of the tiramisu with cocoa powder and chocolate shavings. Refrigerate at least 2 hours before serving.

  • * Strong coffee can be used instead of espresso.
