All you do is take a few spoonfuls of the pesto, heat it in a hot pan, then add the eggs. Eggs fry in pine and basil nut oil and are infused with all of those delicious pesto flavors.

If you love the flavors of pesto, you are going to love these guys. You get a huge dose of fresh basil, lots of garlic, cheese parmesan, olive oil, and toasted pine nuts with hazelnuts. All the flavors of pesto combine with the richness and crispness of a fried egg. Finish it off with a pinch of flaky sea salt and chili flakes and you will be in breakfast heaven.

Pesto and eggs: that’s it! If you want to do a little more, toast a piece of sweet and sour dough, spread a little ricotta on top, add a little avocado, cover it with the pesto egg, a drizzle of honey and a pinch of chili flakes, and flaky sea salt.

Where to buy pesto

You can find pesto at the grocery store in the refrigerated section near the fresh pasta. If your grocery store doesn’t sell it, you can make it at home!

How to make fresh pesto:

You need:

  • 1 large bunch of basil
  • 2-3 cloves of garlic
  • 1/3 cup toasted pine nuts
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup olive oil
  • salt and pepper

In a food processor (or you can chop everything by hand on a cutting board), combine the basil, garlic, pine nuts and Parmesan. Add 1/2 cup of olive oil until the pesto is combined. Taste and season with salt and pepper. Pesto will keep in the refrigerator, covered for up to 5 days.

How to make pesto eggs

  1. Add a few tablespoons of pesto to a nonstick skillet. Distribute it and let the oil heat up.
  2. When the oil is hot, break and egg (or two) in the pesto.
  3. Let the egg cook slowly until it is at the desired doneness (do not turn the heat too high or the pesto will burn).
  4. Enjoy sprinkled with chili flakes and flaky sea salt!
