Ingredients:

  • 2 tablespoons unsalted butter, melted
  • 3 garlic cloves, minced
  • 1 tablespoon of freshly squeezed lime juice
  • 2 teaspoons of chili powder
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of ground cumin
  • Kosher salt and freshly ground black pepper, to taste
  • 2 pounds of medium shrimp, peeled and deveined
  • 3 tablespoons chopped fresh coriander leaves

To serve

  • Tortillas (flour or corn)
  • Shredded cabbage
  • Sliced ​​avocado
  • Sliced ​​jalapeños
  • Crumbled Queso fresca
  • Hot sauce

Directions:

  1. Preheat the oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. In a medium bowl, whisk together the butter, garlic, lime juice, chili powder, paprika, cumin, 1 teaspoon of salt and 1/2 teaspoon of pepper.
  3. Place the shrimp in a single layer on the prepared baking sheet. Stir in the butter mixture and mix gently to combine.
  4. Place in the oven and bake until pink, firm and cooked through, about 8 to 10 minutes. Stir in the cilantro.
