Southern Macaroni Salad Recipe

My macaroni salad recipe includes a few ingredients that I particularly like in the macaroni salad, but you can absolutely customize the ingredients to suit your preferences. For example, I love jalapenos and peppers – so of course I included them in my salad. I also love the flavor of celery seeds. I use it in my favorite coleslaw recipe and can’t get enough! So I added some to my salad.

Southern macaroni salad ingredients

As I mentioned, you can really personalize your salad and tailor it to your taste. Here is how I often do it.

  • Elbow noodles
  • Celery
  • Jalapeños
  • Chili peppers
  • Green onions

Macaroni vinaigrette

For this dressing, you want to think light, fresh and tasty! Here’s what you’ll need:

  • Mayonnaise
  • apple cider vinegar
  • Lemon juice
  • Salt and pepper
  • Celery seed – optional

To lighten this salad

Substitute Greek yogurt for the mayonnaise in the dressing

Additional mixing ideas

  • Dill Pickles – Diced pickles are a wonderful addition. I use them from time to time in place of the jalapeños.
  • Black olives – drained and included whole or sliced
  • Green olives – drained and included whole or sliced
  • Grape tomatoes – halved
  • Bacon – cooked and diced
  • Ham – diced
  • eggs – boiled then diced

How to make a macaroni salad

  1. Cook the pasta. Cook pasta according to package directions.
  2. Rinse. Pour the cooked pasta into a colander and rinse well with cold water. Drain well and let the pasta continue to drain while you prepare the other ingredients.
  3. Prepare the macaroni vinaigrette. In a small bowl, combine mayonnaise, apple cider vinegar, lemon juice, salt, pepper, and celery salt if using.
  4. Mix the salad. Add the cooled pasta and salad ingredients to a large bowl. Pour the dressing over the salad and toss well until combined.

Can you make a macaroni salad ahead of time?

Yes! The macaroni salad is even better after having the opportunity to rest in the fridge I think. Cold pasta absorbs more of the dressing and becomes even tastier in my opinion.

You may want to add a little more mayonnaise just before serving if the pasta has absorbed much of the dressing.

If you’re using bacon, you can stir in crispy bacon right before serving.

How long does the macaroni salad last in the refrigerator?

This salad keeps well in the refrigerator for up to two days. Simply store in an airtight container or in a large serving bowl tightly covered with plastic wrap.
